Malted Milk Ice Cream

A couple of months ago I was on a serious malt kick. I had ordered some malted milk powder from King Arthur Flour and went on a malt bender; most notable were the Chocolate Malted Whopper Cookies and Malted Vanilla Milkshake. Seriously delicious. The malted milk powder takes just about everything to another level. Chocolate, vanilla, and of course… ice cream. If malt powder makes milkshakes dream-a-licious, then just imagine a milkshake made with malted milk ice cream… Whoppers and all!

I tasted the ice cream before I stirred in the Whoppers candy and can honestly say that it is equally as good with or without. The ice cream itself is packed full of that wonderful malt flavor, and it is only intensified once the Whoppers are stirred in. Some of the candy stayed crunchy and some softened a bit in the ice cream, so there is a nice mix of textures.

Malted Milk Ice Cream
Ingredients
- 1 cup (236.59 ml) half-and-half
- ¾ cup (150 g) granulated sugar
- Pinch of salt
- 2 cups (476 ml) heavy cream
- ¼ teaspoon (0.25 teaspoon) vanilla extract
- ⅔ cup (83.33 g) malt powder
- 6 egg yolks
- 2 cups (200 g) malted milk balls, Whoppers, coarsely chopped
Instructions
- 1. Warm the half-and-half, sugar and salt in a medium saucepan. In a large bowl, whisk together the heavy cream, vanilla and malt powder and set a mesh strainer on top.
- 2. In a separate medium bowl, whisk together the egg yolks. Slowly pour the warm mixture in the egg yolks, whisking constantly, then scrape the warmed egg yolks back into the saucepan.
- 3. Stir the mixture constantly over medium heat with a heatproof spatula, scraping the bottom as you stir, until the mixture thickens and coats the spatula. Pour the custard through the strainer and whisk it into the malted milk mixture. Stir until cool over an ice bath.
- 4. Chill the mixture thoroughly in the refrigerator, then freeze it in your ice cream maker according to the manufacturer's instructions. As you remove the ice cream from the machine, fold in the chopped malted milk balls.

This was delicious!!!
I ran out of eggs, so was one short. I didn’t miss it.
It would have been good without the malted milk balls, but it was even better with them in. Instead of chopping them, I hammered them with the side of a meat mallet.

I have made this twice within the past month; it is perfectly creamy and smooth. A little goes a long way, as it is rich, but much better than not knowing what is in the store variety of ice cream. It is as close as you can get to Tillamook’s “Malted Moo” ice cream and it’s the best! Thank you for a great recipe. I will be trying more from your site, ice cream and others.

Hi Mae, Malted milk powder is made from a mixture of malted barley, wheat flour and evaporated whole milk. It’s wonderful, especially in dairy products like ice cream and milkshakes!
I just made/ate this. WOW! I honestly might add a tablespoon or two more of malted milk powder but that’s just personal preference. Rather then use malted milk balls, I used David Leibowitz’s recipe for stracciatella and it complimented the ice cream PERFECTLY. It’s a lot less work than other ice creams because you just add the powder right to the custard.

Thanks for this recipe. Made it today and it was easy and the family loved it. After we made it, we threw it in the freezer for about an hour so that it was a little bit harder (rather than soft serve style), and it was just perfect. Thanks again.

Hello. I live in Lebanon where so many of the ice cream companies here use powdered milk instead of fresh cream so i have resorted to making homemade ice cream and it has been a huge success so far thanks to your site :o}
If i cant find malt powder here, is there anything that i can replace it with? Thanks.
Hi Fadia, Unfortunately, I’m not sure what you could replace the malted milk powder with that will still impart that same flavor. If you have Ovaltine available to you, that might work.
Just made this, but added 2 T cocoa powder to the hot half and half. OMG! This is the best malt ice cream ever! Added about 4 oz of chocolate that I melted with 1 T of canola oil, spread out on foil, froze, chopped, and then added to the mix 1 minute before it was done. Thanks for this recipe!!
I love this site and LOVED this malt ice cream. I just purchased that kitchenaid ice cream bowl attachement and was wondering the web for recipes. I made the pistacio one and it was awesome, so i tried this malt one next. I ran out of whoppers to chop and so I used Halloween candy such as twix and snickers to supplement the whoppers for the candy chunks. HOLY MOLY! Best ice cream i have ever tasted….and i am a novice with making home made ice cream. I have to say the recipe should get the credit.
I love this site!!! I wandered in from a search for PB&J bars and drooled thru the list of recipies. I’m here to stay. I’ve been looking at the ice cream machine my son bought me and trying to figure out what kind to try first. This is it. My favorite is dark chocolate ice cream…the darker the better and I’ll figure out a way to make this dark choc. super malted. I’m like on of the reviewers, if all else fails, eat the malt with a spoon. Imagine this in an ice cream pie with or without the whoppers and maybe marshmallow cream in the meringue…I’m off to find malt powder…Silver

Literally made this minutes ago. Tastes amazing! I’m wondering how you “coarsely chopped” your malt balls, because I had to chop them in half one by one which took forever. Tips please!
Hi Trish, I just used a big chef’s knife and started chopping away. A few slid away and I had to wrangle them back, but for the most part they chopped up just fine.

This recipe sounds delicious! Even when I was a young girl, my mom always made us kids Malts as a treat. I made them for my son while he was growing up. Now, when my husband’s son comes to visit from Germany, he always asks for a Chocolate Malt. It’s so easy, I use my electric mixer, put vanilla ice cream, a little milk, and I always have on hand chocolate malt powder. Yummy!!
you should be able to get chocolate covered Whoppers in the US. Maltesers are easily available in the UK, Ireland and the Netherlands, and probably some other countries in Europe as well

You guys have to try ‘Maltesers’ – they are malt chocolate coated balls, made by Cadburys. They are available in the UK, but perhaps not widely available in the US. The malt and the milk chocolate is a great flavour combination – I crush them and put them over icecream. Yum !

This ice cream looks fantastic! I just tried out a Strawberry-Ban-Oreo frozen yogurt that was pretty excellent, but I have my heart set on a white chocolate-blueberry flavor before the month’s out.
