Strawberry Pimm’s Cup Cocktail
Since “the finger incident” on Sunday, I’ve been fairly useless in the kitchen. I have strict doctor’s orders not to do any dishes, and everything else takes about a gazillion times longer than it should, which basically makes me feel like not doing much of anything. However, while my Chief Culinary Consultant and I were watching some Wimbledon coverage on Monday, the broadcasters mentioned “Pimm’s Cups”, which they said are a signature drink of Wimbledon. I’d never heard of them, but after a quick search I found that they are a cocktail made with Pimm’s No. 1 liquor, lemonade and carbonated soda. During the broadcast, they specifically talked about strawberry Pimm’s cups, which piqued my interest. When my CCC made his grocery run that resulted in Italian cream sodas, he also snagged a bottle of Pimm’s No. 1 so I could try my hand at a strawberry version of the cocktail. Good doesn’t even begin to describe it!
This is all you need to mix up a strawberry Pimm’s Cup:
(I forgot the 7UP! You need 7UP, too :))
I made a homemade strawberry syrup, but my guess is that you could substitute a store-bought one from a brand like Torani. That being said, I think the homemade strawberry syrup is what makes this drink; the flavor is fantastic! Plus, once you make a big batch, you can keep it in the refrigerator for up to a month, so it’s perfect to have at the ready if your’e planning a party.
Pimm’s No. 1 is a gin-based liquor with a spicy citrus flavor, which makes it the perfect base for this drink. Instead of going the traditional lemonade route, I took the broadcasters’ cue and went with strawberry as the primary flavor, including a splash of lemon juice, and topping off the drink with a lemon-lime soda such as 7UP. The drink is garnished with sliced cucumbers, sliced strawberries and fresh mint.
This is basically everything wonderful about summer in a glass – it’s fruity, bubbly, has a little lemon and a zing. I took a sip and couldn’t believe how fabulous it was, since many times I find mixed drinks to be way too overpowering for me. Wimbledon knows how to do it! I’ll be sipping on this while my finger heals up and I’ll be back with some new recipes next week!

Strawberry Pimm's Cup Cocktail
Ingredients
For the Strawberry Syrup:
- 16 ounces (453.59 g) fresh strawberries, hulled and rinsed
- 1 cup (200 g) granulated sugar
For the Drink:
- Ice
- 2 ounces (56.7 ml) Pimm's No. 1
- 1 ounce (28.35 ml) lemon juice
- 1 ounce (28.35 ml) Strawberry Syrup
- 2 ounces (56.7 ml) 7UP or ginger ale
- Sliced cucumber, strawberries and fresh mint to garnish
Instructions
- Make the Strawberry Syrup: Puree the strawberries in a blender or food processor until smooth. Press the mixture through a fine-mesh sieve and measure out 1 cup of the strawberry puree. Add it, along with the sugar, to a small saucepan and bring to a light boil over medium-high heat, stirring until the sugar has dissolved. Remove from heat and allow to cool to room temperature. (The strawberry syrup can be kept in an airtight container in the refrigerator for up to a month.)
- Make the Drink: In a cocktail shaker with ice, combine the Pimm's No. 1, lemon juice and 1 ounce of the strawberry syrup and shake. Strain into an ice-filled glass and top with the 7UP. Garnish with sliced cucumber, strawberries and a sprig of fresh mint.

Hi! I know I’m commenting on something from ages ago… But I’m a pedant so I had to point this out.
You mentioned substituting 7up for lemonade, but there’s actually one of those weird cross-Atlantic language things going on. When Brits say “lemonade” they actually mean 7up/Sprite/lemon lime soda. I’m not sure how american lemonade would taste mixed with Pimms, I wonder how many people have done that by mistake after reading recipes online :)

After sampling the Black Cup at a tasting recently, I gave the recipe a whirl at home and was pleased with the flavorful red results. With a few months to wait before berry season, I used a slightly defrosted strawberry from my freezer in place of a fresh one and found it worked out just fine. I also discovered that the cucumber slice garnish is more than just a pretty decoration for the glass. Its clean, bright aroma lends the drink a little extra garden-fresh pizazz.

Sorry to hear about your finger. This January I had an immersion blender incident with my non-dominant index finger and it was no bueno. I couldn’t scrub into surgery for 3 months!
I recommend keeping a close eye on it and if anything looks worse, go to the doctor asap! Fingers are tricky business!
Love to watch Wimbledon but now that we don’t have cable I miss it! But this drink looks like it could change my mood quickly!

I so feel your pain on the finger….I broke my ring finger last week and had surgery over the weekend and can do what amounts to nothing! Not exactly my idea of vacation since I can’t even cook with one hand. I live in the UK so am all too familiar with Pimms and since today is relatively warm and i’ve stpped drugs…I think I’ll celebrate with a Pimms cup.

Ugh so sorry about that finger incident! But if it gets you out of dishes and gets you more drinks like this, that maybe? is the silver lining. Ouch though! I have a massive burn on my hand from a thin oven mit super hot baking tray and can relate to hand injuries.
