Those coconut cupcakes look great. My daughter wants a coconut cake for her birthday and I hope to use this recipe for one 8″ round pan. We are a small family and I don’t want a lot of leftovers. Do you think this recipe would give me a one layered cake? Thanks.

Making a pie for Pi day (3.14) tomorrow = the debate between key lime, chocolate cream, and pumpkin is ongoing. Thank you for sharing such cute pictures of your sweet kids and pups.
