Seven Layer Dip

It’s Super Bowl week! That means a week full of great dips and appetizers for your Super Bowl party on Sunday. In case you missed it yesterday, you’ll want to check out my 45 Super Bowl Recipes for Super Bowl XLV – a roundup of recipes already on the site that are perfect for game day menus. This week I have five new recipes to add to that roundup – one appetizer and four dips that I think you’re going to love. First up is a classic – Seven Layer Dip.
This dip consists of these seven layers of deliciousness:

1. Refried beans
2. Shredded cheese
3. Jalapeños
4. Avocado
5. Tomatoes
6. Sour cream
7. Olives
Can you say amazing? The combination of spice from the beans and jalapenos is perfectly balanced with the coolness of the avocado and sour cream. It’s sort of an all-star concoction of some of the best ingredients from all dip recipes. It’s easy to prepare and also easy to double or triple if you’re feeding a large crowd. Enjoy!

Seven Layer Dip

Yield: About 8 servings
Prep Time: 25 minutes
Total Time: 25 minutes
Ingredients:
15-oz can refried beans
¼ cup water
1 teaspoon olive oil
1 teaspoon chili powder
¼ teaspoon ground cumin
Salt, to taste
1 cup shredded cheddar or Monterey Jack cheese (or a combo of the two)
1 jalapeño pepper, seeds and membrane removed, finely chopped
1 avocado, finely chopped (or 1 cup of your favorite guacamole)
1 tomato, seeds and juices removed, finely chopped
1 cup sour cream
1 small can black olives, slicedDirections:
1. Heat the refried beans in a medium saute pan or in a cast iron skillet. Stir in the ¼ cup water to get a creamy consistency. Stir in the olive oil, and then add the chili powder, cumin and salt, stirring until combined.
2. Once the beans are hot and bubbly, spread them over the bottom of a serving dish. Immediately sprinkle the cheese over the beans.
3. Layer on the chopped jalapeño, avocado, tomato, sour cream and black olives.
4. Serve immediately with tortilla chips.

I’m obsessed with this dip! I make a similar 7-layer for a lot of parties I go to. It’s so good!
