Loaded Baked Potato Dip
This loaded baked potato dip combines all of the fantastic flavors of a classic loaded baked potato – sour cream, bacon, cheese and scallions. Scoop away with potato chips!
For the longest time, the only way I ever made a baked potato was in the microwave. Sometimes you just can’t argue with quick and easy, right? Well, once I started baking them in the oven, there was no turning back for me – baked potato perfection! I typically keep it fairly simple when I have baked potatoes and usually top them with butter, salt and a lot of pepper. However, there really is nothing better than a loaded baked potato when you’re feeling the urge to splurge. A steaming hot baked potato topped with mounds of sour cream, bacon, cheese, and chives. This is heaven for most of us carbaholics (and cheese and bacon fanatics) – so much goodness!
Now imagine everything that is awesome about a loaded baked potato and throw it into a dip that you can scoop up with potato chips. A favorite meal/side dish instantly became one of my favorite appetizers – behold the loaded baked potato dip!
While it takes a little bit of patience to wait for a baked potato in the oven, this dip definitely satisfies my quick and easy soft spot for microwave baked potatoes. This loaded baked potato dip contains only four ingredients, and it can easily be made in less than 15 minutes. It’s one of the most outstanding dips I’ve ever chowed down on… supremely addictive.
I’ve made this countless times over the last handful of years and each and every time it’s met with oooh’s and ahhh’s. When people ask what’s in it, no one can believe how simple it is to make. Keep this recipe on hand for an easy party dip – it’s great for everything from the Super Bowl to a casual get together and summer picnics!

Loaded Baked Potato Dip
Ingredients
- 16 ounces (453.59 ml) sour cream
- 12 ounce (340.2 g) package bacon, cooked and finely chopped
- 8 ounces (226.8 g) sharp cheddar cheese, shredded (about 2 cups)
- 2 green onions, thinly sliced
Instructions
- Combine all ingredients in a medium bowl and refrigerate for at least one hour before serving to allow flavors to meld together. Garnish with extra shredded cheese, crumbled bacon, and chopped green onions. Serve with your favorite potato chips or pretzel crisps.

can you freeze this dip
I added a 1/4 tsp of cayenne pepper for an extra kick. Also, use bagel chips to dip into this as the dip is thick.
Hi would it be ok to use real bacon bits(pieces) that come premade?
I have always used the pre-made real bacon bits for ease of preparation for this dip. Tastes just as good.

I came across this recipe recently and made it for a family gathering. It was a huge hit. I found setting it out an hour before it was needed helped it to soften up enough to enjoy. As long as they’re already cooked I don’t think moisture would be an issue!
I used your recipe and it made an amazing dip, then i decided I would actually add real potato and it made an awesome potato salad mixture, so not only does it make an amazing can’t stop eating dip but if you want a good loaded potato salad add real potatoes, everyone requests both types when i go to an event now😁💜
I’ve been making your loaded potato dip recipe for several years now. It’s become a family favorite!! I use dried chives instead of green onions (personal preference) and always have to make a double batch, if not triple. I’ve also used other shredded cheese blends as well with great success. We also have used the dip as a topping for baked potatoes….YUM!! Very versatile recipe!! Thanks for a family favorite!!

Thinking of taking it to a party. How long can this dip sit out. As for me, ill b making it at 3pm, put in fridge for 1 hr. Then off i go to party, and it wont be served till 5pm. Is that to long?

Looks like a great recipe and I can’t wait to make it, but I just thought you should know that if you have to refrigerate for an hour before serving, then the total time is 70 minutes, not the 10 minutes you have listed. It should read 10 minutes prep time, 70 minutes total time. Otherwise someone is going to start making this 10 minutes before their guests show up and not realize until too late that everyone is going to be hungry for an hour. Please fix.
Why don’t you read the recipe again before getting an attitude? The dip can be served as soon as it’s made. It only needs refrigerated if making ahead of time.

Made this dip for staff Christmas party. Taste amazing, but is soooo think. Chips were breaking in the dip bowl. Ended up having to use a spoon to kind of spread it in a chip to eat. Did I do something wrong or is it suppose to be this thick. What should I do to make it more “dip able” and less think?

Hi Julie, If it’s too hard, simply take it out of the refrigerator 30 minutes to 1 hour before serving to allow it to soften up and be more “dippable”.

Hi Rachel, Yes, per the instructions, mix all of the ingredients together, then garnish with extra cheese, bacon and scallions if you’d like.

If you replace the sour cream with 0% fat plain greek yogurt, it tastes exactly the same, with no fat and added protein! (not that the other ingredients don’t add fat :) But this helps!) Make sure and get the thick and creamy kinds of plain greek yogurt (like Chobani or Fage) instead of the thinner kinds (Oikos or such).
Could you substitute the sharp cheddar with mild please? I have a load of mild cheddar that I wanted to get rid of, was wondering whether it would turn out OK anyway. Thanks

I made this dip for New Year’s Eve with my family. It was absolutely delicious and everyone went crazy for it! It is essential, however, to use good quality potato chips (who would have thought there would ever be a use for that sentence?) – not generic ones. This dip is very thick, so cheap chips will break easily!
Hey! Thanks so much for this simple but delicious recipe. Even though the chip was meant to be the potato component, my friends and family preferred it when I crumbled up some potato in it – they loved the little chunks mixed in (boiled or heated in the microwave-doesn’t have to be perfect as it isn’t the “star”). I also mixed half regular sour cream and half reduced fat so it was a tad more healthy and a little less thick (no broken chips!)

I made this dip for my office pitch in, and everyone loved it. I followed your directions exactly, then added a bit more bacon and chives. It was perfect!
I have been making this dip for a long time and it is great. The only addition is to add a package of Ranch Dressing to it. Everyone loves it and it makes alot. So I don’t feel so guilty I use Trader Joes reduced guilt potatoe chips with it.
I tried this the day you posted it and it has been a huge hit at home and when I make it for our employees, it just disappears and I’ll hear someone say, “No, it’s not any good try something else.” Then they take the bowl away to their own table. Making it ahead of time and giving it time to sit so the flavors enhance is the key, it needs no other ingredients IMHO. Home Run Michelle.
To others, you do need to let it sit out at room temp for it to “soften up” a bit”.
I’ve made this enough times I don’t follow the recipe exactly so I add more of this or less of that to make the consistency easier to dip but still taste amazing.
Well…. there were a couple of things that I did to this already awesome:) idea!
After baking the potatoes I added the center’s within the mixture.. and lastly I sliced up raw potatoes and made homemade potato chips to serve with the dip.. some flavored with salt and vinegar and the other with dry ranch seasoning! You could use as many variations as you would like!
Just tried this. It was good, but too thick to “dip” chips without breaking. Also, VERY salty. I think this would be great mixed into mashed potatoes though. Thanks!

Made this with part cream cheese instead of sour cream, and a little smoked gouda in addition to the cheddar. It was a-MAZ-ing. I also had trouble getting chips to successfully scoop it, so I heated it. It was delicious as warm, melty dip, even reheated many times. It was quite the salt overload though. I had to limit my portions.
I made this for a bacon themed party and followed the directions but it was just too thick! Even the wavy thicker chips would break when someone tried to dip it. I felt kind of bad for bringing it. All the other recipes I’ve tried here have been awesome but I was surprised that this was in the top 10.
Hi Mimi, I’m sorry you were disappointed. The next time you might try taking it out of the refrigerator at least 15 minutes before serving to let it come up to temperature a bit if you found it hard to dip.
I have just done these then loded back into the skins, baking for 10 mins.

Love this next time I’m at the store im going to get everything for this. And my Chives I have planted are growing and will be perfect for this. Oh and if you want to have even better baked potatoes you need to roll the uncooked potatoes in butter or cold bacon fat then set a cast iron pan out and pour in Kosher or coarse sea salt and place the buttered up potatoes on the bed of salt and bake for a hour till done. The skin is so crisp and yummy and the inside is so fluffy.
Don’t need a special occasion for thie. Just the dip and a bag of chips

I make this with 1 1/2 tsp. Worcestershire sauce added, then you put it in a hollowed out sourdough round, wrap in 2 layers of tinfoil and bake at 325′ for 50 minutes. It is sooooooo good warmed and served with the bread you would not believe it! I have made it for years and get so many request from family and friends!

Hi Christine, I am not sure what ReadyCrisp bacon is (you’re talking to a girl who LOVES the smell of bacon, ha!), but I can tell you with 100% certainty that this will be better with real bacon ;-) If you really don’t want it, you can substitute something else, but it likely won’t taste the same.

Hi Jackie, You don’t use an actual potato in this dip. The concept of the dip is the “loaded” part of loaded baked potato – sour cream, bacon, cheese and chives (or green onions)… the potato part is the potato chip that you use to dip with.

this dip is DELICIOUS! I’m actually eating some now, for breakfast, it’s bosses day; and it’s even more delicious with Doritos and Fritos honey bbq flavor twists; this would be perfect for Sports Sunday or any day! Also, take it up a notch by shredding a little jalepeno cheese in it – uhhmmm, yum!!!
Made this for a fantasy football draft party, and it was a HUGE hit! I left out the green onions (several of the people who were coming don’t like onion of any kind) and it was still amazing! I was worried it was going to taste too sour creamy (after all, there’s 16 oz in this!!) But it didn’t at all! I think letting it set for a couple of hours is the most important part. The yummy bacon flavor melded with the sour cream, and it was just smokey, cheesy, creamy and delicious!! My son ate half of it on his own, he loved it so much!! Making it for a Pee Wee football tailgate tomorrow!

I make a recipe very similar, except mine is a warm dip. 16oz sour cream, 8oz cream cheese, 2 cups shredded cheddar, 3oz pkg Oscar Mayer real bacon pieces, and 1 cup green onions chopped. Throw it all in the crock pot until mixed and warm. Serve with potato chips. Sooo good! I’ve never had the cold version. I’ll definitely be trying it!

If you prefer your potatoes in the oven a great way to cut the cook time is a new gizmo from Pampered Chef. It’s in with the grilling stuff but would work just as well in the oven and it was only $10. It has a piece if metal that you slap your potatoe on so the heat goes into the middle and you cook from the inside and the outside. I never keep the boxes so no clue what it’s called but it was love at first potatoe.

Hi Katie, I personally wouldn’t, but if you REALLY like yogurt and think it would taste good with the other ingredients, you certainly can. I’m just not sure that the resulting flavor would be as close to the original as you’d want.

I make basically the same thing but I heat mine up in the oven, then transfer to a bread bowl and then serve with pita chips, bagel chips and pretzel rods, it tastes even better warm!
Great dip! I’ve made this a few times and on a cold night here in Sydney, transfered the cold dip into a pie pan and heated in the oven- until the cheese on top was melted and browned slightly- soo yummy! Just a tip, if you do choose to heat the dip- don’t use Low Fat or Light Sour Cream, it doesn’t hold up to the ovens heat (or at least the varietys we have here don’t).
I just made this dip for my husband’s ‘Hail and Farewell” tomorrow night. He is going away for Army training. I am SUPER excited about it. It was SO easy to make. I did double the recipe as we will be having several guests tomorrow night. We are actually going to use waffle fries for our dipping. I hope it turns out well! Thanks for the recipe!
This sounds so yummy! Another great way to do baked potatoes is in the crock pot….rub with just a little olive oil and sprinkle with kosher salt (or anything you like), pop them in the crock pot on low for 3-4 hours and voila! A no hassle baked potato that you made while you went about your day!

I’m sure it would be good! I love the simplicity of the regular loaded baked potato ingredients, but the beauty in food is that you can easily adjust recipes to suit your tastes. I say go for it if you’ll like it!

This dip looks fabulous! Will definitely be making this one! (I also rub potatoes with olive oil and then I sprinkle them with some kosher salt and bake at a high temperature so the outside is crunchy and inside is soft – delish!)

I’m glad to see that I am not the only one that hides things in the back of the refrigerator. This dip recipe is a keeper, and I am going to share it with a Super Bowl fan in the family! One thing that I do with potatoes is make Parmesan Steak Fries by tossing cut potatoes in a zippered food storage bag along with oil, Italian seasonings, and parmesan cheese and bake them. Hubby, who never cooks, brought me this recipe and makes it himself! It is spot on. Enjoy! Lyn

I make something similar but mine also has mayo in it and instead of cheddar cheese you put in swiss cheese then you bake it. It is always a big hit.

I completely agree about the gazillion times better in the oven and I would even take it a step further. I think they are EVEN BETTER if you bake, then cool and then re-heat! The texture is a lot more moist! Try it!

I always start my baked potatoes in the microwave, then transfer them to the oven to finish. That way, I have the benefits of an oven-baked potato without all the time. It can cut the total cooking time by a half or more.
