Ahh, October. The month of the pumpkin. Pumpkin carving, pumpkin seed roasting, the pumpkin spice latte, pumpkin-shaped Reese’s cups (what? did I say that?)… seemingly all things pumpkin. Except, of course, for pumpkin pie – that doesn’t show up until Thanksgiving. I’ve gotten the sense that the pumpkin surge has started even earlier this year and appears to already be in full swing. So whether you’ve already been breaking open cans of pumpkin or are still itching to get started, I hope these recipes provide some sweet inspiration. Just found an awesome Pumpkin recipe last nite, and made it today. Actually, I made 2 HUGE pans of these Pumpkin Cheesecake Brownies, and sold them ALL! This is a GREAT Pumpkin Cookie that we just love; they are soft with different textures of the oats and the pumpkin seeds. I used Salted Pepitas from World Market. The recipe is from Elise of Simply Recipes and made by her friend Garret McCord of Vanilla Garlic.

I’m not a huge pumpkin treat eater, I like them – but I don’t really go ga-ga for them. The only pumpkin treat that I can’t wait to make every fall is Pumpkin Pie Cake – it has a lot of butter in the topping, so it’s got an awesome salty/sweet thing going on (I am a sucker for salty-sweet). Another cookie I like is a Pumpkin White Chocolate Chunk Cookie http://www.recipegirl.com/2008/08/10/pumpkin-white-chocolate-chunk-cookies/ It’s good because most pumpkin cookies are rather soft and cakey… but this one is more like a cookie.

Yum. Those all look wonderfully fallish. I have 4 small sugar pumpkins and 3 cans of pumpkin to put to use! I think your whoopie pies are calling out to me. I just polished off the pumpkin cheesecake today- not at all like the one you linked, mine has much more pumpkin and fresh ricotta- and am ready to move on to my next pumpkin treat!

I try to make harvest loaf in the Autumn. It’s a pumpkin bread with chocolate chips and a spiced glaze. It is amazing and I can’t imagine Autumn without it. My mom made it all the time growing up, and now I’ve been out of the house for several years, I hope to keep up the tradition.

Not a fan of pumpkin except for carving them and making pumpkin seeds. However I still bake lots of pumpkin breads and pumpkin rolls (over 2 dozen most Novembers) for family and friends. People always want my pumpkin roll recipe but it is only the recipe found on the can of Libby Pumpkin! The only thing I change is using peacns instead of walnuts.

Happy Month of the Great Pumpkin, Michelle (and it is the month of the anniversary of the Peanuts gang)! Where should I start with these amazing desserts? I think it will be the snickerdoodles; they say Fall to me: cinnamon and pumpkin,double yum. However here in the groceries of New England there continues to be a shortage of canned pumpkin, am not happy….must get on the hunt for supplies to last thru November.

Pumpkin recipes! Thanks for these recipes. Actually my pumpkin plants have many produce and I got problems on how to cook them all. I can do these recipes and taste all of them.

I must say I am disapointed that people talk about pumpkin like it is not something that can be used all year long. I know I am guilty of this sometimes. Pumpkin season starts when Starbucks brings out their pumpkin spice coffee at the beginning of September and ends when I can not find it any longer, usually around mid-March. I keep canned pumpkin in my kitchen and always have at least 3 bags of fresh in the freezer. I live on pumpkin.
