Artichoke Spinach Dip

Okay, raise your hand if you love dip. Me too. Meeeeee too.
I thought that there might be a lot of you out there. Thank goodness I’m not alone. Any and all dips, bring ‘em on! Cheese, taco, guacamole, artichoke, spinach, crab, hummus, and the list goes on and on. If it’s dip, you can bet your bottom dollar I’m going to want to devour it. Actually (and this just came to me right this second), I think I should throw a dip party. No real food, no meal, and no dessert. Everyone just brings their favorite dip. Oh yes, I think this will happen. Perfect for a football Sunday (or Saturday, if you dig college football) this fall! Anyway, back to the dippity dips…
My Chief Culinary Consultant and I have become quite the connoisseurs of spinach artichoke dip. We order it early and often when we go out, anywhere from a bar when we’re watching a sporting event, to nicer restaurants before our main meal. Sometimes crab is thrown in there, sometimes it’s served with tortilla chips, sometimes potato chips or baguette. What can I say? No matter how it’s served, we love the stuff! Which makes it insane that up until now I had yet to create a recipe for a killer homemade artichoke spinach dip. Problem is now solved, just in the nick of time for football and hockey season!

As far as appetizers and dips go, the easier the better since most times you’re making them for a crowd and no one wants to be fussing in the kitchen when company arrives. Nor do you want to miss kickoff or the puck drop (at least I don’t!). And they don’t come much easier than this dip. I had tried a couple old recipes of my mom that were either really mayonnaise-y or too sour cream-y, or not enough spinach. I think this version has the perfect amount of everything! Mix everything together in one bowl, dump it into a baking dish, pop it into the oven and 30 minutes later you’re ready to dig in!
{Writing this post now has me craving brisk fall days, football Sundays, pots of soup and apple pies. Can’t wait!}

Artichoke Spinach Dip

Prep Time: 10 minutes
Cook Time: 30 minutes
Total Time: 40 minutes
Ingredients:
1 (14-ounce) can artichoke hearts, drained and finely chopped
1 (10-ounce) package frozen chopped spinach, thawed and drained
1½ cups (6 ounces) finely shredded or grated Parmesan cheese, divided
1½ cups (6 ounces) shredded Monterey Jack cheese, divided
4 ounces cream cheese, softened
2/3 cup sour cream
1/3 cup mayonnaise
2 garlic cloves, finely minced
Paprika, to taste (optional)Directions:
1. Preheat the oven to 350 degrees F. Press the excess moisture from the spinach.
2. Combine the artichokes, spinach, 1¼ cups of Parmesan cheese, 1¼ cups of Monterey Jack cheese, cream cheese, sour cream, mayonnaise, and garlic in a bowl and mix well.
3. Spoon the artichoke mixture into a 1½-quart baking dish. Sprinkle the remaining Monterey Jack and Parmesan cheeses on top, and then sprinkle with paprika, if desired. Bake for 30 minutes. Serve warm with tortilla or pita chips, crackers or vegetables.






I am obsessed with Spinach Artichoke dip! I am so happy you have posted this recipe. I have never found one I liked homemade so I am very excited to try this one.
Here in Arizona, we have this restaurant called Oregano’s. They make a spinach artichoke dip they call Boom Dip and it is my absolute favorite ever. Your recipe looks very similar.

I love anything with the word “dip” in it. I was just telling my fiance the other day that I can’t wait for football season specifically for the snacks.
So my favorite dip would be 7-layer dip. Anything with guacamole and cheese can steal my heart!

I make a similar spinach and artichoke dip (with a few small changes) and even though I think I make a lot more prettier or complex appetizers, this is what is always requested! I think everyone loves a warm, cheesy, gooey dip like this!

Yum. I love Spinach Artichoke Dip. I also buy it too often. This looks so good. A Dip Party sounds wonderful. There are so many to pick from – 7 Layer Dip, Guacamole, Hummus, Bahbaganoush, onion dip, the list goes on and on.
I would be there in a second flat with a bag of homemade pita chips and a bag of Rice Works Chips.

Oh, you can totally make dessert dips for your dip party! Favorite dip? Not possible to determine. There is this white cheese dip at a local Mexican dive that I love…and the Mexico City spinach queso from J. Alexander’s is darn good too.

I love how little mayonaise is in this one! My mom used to make one that had a cup of mayonaise and a cup of sour cream-blech. I too am looking forward to football Saturdays and Sundays and making this.

This looks great – very similar to one I make regularly that is highly requested by everyone, especially me as I can eat it for every meal. I use a head of roasted garlic in mine which adds a nice flavor instead of minced. I like the addition of the Monterey Jack cheese – would make it even gooier – mmm!

My other all time favorite dip besides artichoke and spinach is
BLT dip
this is so easy and yummy
serve with Bread rounds
1lb bacon crisply cooked and crumbled
1 c mayonnaise
1 c sour cream
in a bowl blend to gether mayo,sour cream and bacon I do this in a 9″ pie plate place in fridg when ready to serve I cover with shredded lettuce chopped tomatoes and some shredded cheese

This would be a perfect dish to serve on football Saturdays (yes, I’m a huge fan of college football). I’ll have to make this the next time we have people over to watch Michigan State football! Go Green!

I too am crazy about dip! I can (and have) happily sit down with a bowl of dip and some dippers and make a meal out of it. Spin dip is one of my favs too, but I have yet to find the perfect at home recipe although I’ve tried out several. I can guarantee you that your recipe will be making an appearance at our house soon!
My favorite dip is Buffalo Chicken Dip. I just posted our version of the recipe on my blog. It’s always a crowd pleaser!

Just made this for a party last night, and it was gone so quick I never got more than 1 chip-full! I’ve tried several hot artichoke dip recipes, and this was the first one that came out absolutely perfect – nice, browned crust, super creamy, and not at all oily. I might even make another batch tonight just for myself!

Artichoke Spinach Dip is one of my hubby’s favorite appetizers whenever we go out. I have made a few versions of my own. I’ll have to give your recipe a try next time… It looks great!

I have made this dip twice now, and both times it came out wonderful!
I brought it to a New Years Eve party for the second round of making it and it was gone by the end of the night. The first time that I made it, it was gone within an hour!

I too love this dip! I made it for a party recently and it was a big hit! I’m planning to make it again for Thanskgiving (which we’re celebrating on Friday) as a pre-dinner snack. Any idea whether it can be made a day in advance and reheated?

Out of curiosity, how easy do you think it would be to double this recipe? Would you have to cook it for a longer period of time do you think? I am going to a New Years Eve party dominated by men, so I know the dip will all be gone by the end of the night.

Hi Ashlee, You just want to make sure it’s heated the whole way through and bubbly. If you use a deeper casserole dish it will probably need to be baked longer, but if you use one that’s just longer but the same depth, the same amount of time should be fine.

I love this recipe…and I always “health-ify” it. I use the fat free options of sour cream, mayonnaise, and cream cheese. No one ever notices, unless I tell them

Just made this, and it’s delightful, but for my money it’s a little TOO spinachy; we added another 1/3-ish cup of mayo and a good bit more parmesan to make it creamier and cheesier. Even now it’s not gloopy or runny in the least, which is what we most wanted to avoid. Thanks Michelle!

I made this appetizer for our 1st annual Good Friday BFF Dinner….it was amazing! I added some clumps of grated old cheddar on top before baking, and split the batch into two dishes as the recipe produces a large quantity. Sooooo delicious, thanks for sharing!

I am a huge fan of spinach and artichoke dip and look forward to testing this recipe out. I have been making one of my own for the past 5 years that knocks a crowds socks off. I would love for you to try it out and tell me what you think. I can’t honestly remember where I got this recipe from but I can guarantee it’s a winner.
2 cloves garlic – minced
2 tablespoons onion – minced
1/4 cup salted butter
1/4 cup all purpose flour
2 cups heavy cream
1/4 cup chicken broth
2/3 cup grated Pecorino Romano cheese
2 teaspoons fresh squeezed lemon juice
1/2 teaspoon hot sauce
1/2 teaspoon salt
1/4 cup sour cream
(2) 10 oz boxes frozen chopped spinach – thawed, squeezed dry thru a fine sieve
12 oz jar artichoke hearts – drained and coarsely chopped
*1 pound jumbo lump crab meat (optional)
1/2 cup shredded white cheddar cheese
1 tomato diced
I highly recommend preparing all of the ingredients prior to making the dip, it can be very time consuming.
1. In a 2 quart saucepan or large saute pan over medium high heat, sauté garlic and onion in butter until golden brown, about 3-5 minutes
2. Stir in flour and cook for 1 minute, whisking throughout.
3. Slowly whisk in heavy cream and chicken broth and continue to cook until boiling.
4. Once boiling, stir in Pecorino Romano, lemon juice, hot sauce, and salt; stir until cheese has melted; once melted remove from heat.
5. Stir in sour cream.
6. Fold in spinach, artichoke, and *lump crab meat.
7. Place dip in serving dish and sprinkle evenly with cheddar cheese and tomato.
This dips works great with a salty chip that’s strong enough to uphold a heavy dip.
The dip can be refrigerated until ready to serve, if desired.
The crab meat is a must for my friends and family, I’d love for you to test it out. I look forward to making your version for my family and friends as well. So far your cupcake recipes have been a huge hit with my family. Thank you for all of the wonderful recipes.

There was a restaurant in the town where I went to college that had the most delicious Spinach and Artichoke dip I have ever had. My mom and I loved that dip so much that we only ever ate at that one restaurant when my parents visited! I’ll be making this as soon as I next go home.
