The Weekend Dish: 2/1/2025
Happy FEBRUARY!
It was a very cold January here, but everyone in our house is still hoping for one more BIG snowstorm before spring comes. I have my doubts that we’ll get it, but fingers crossed! I hope you have a fantastic weekend; I’d love to know your favorite way to spend winter weekends :)
On Brown Eyed Baker This Week
Chipotle Chicken and Corn Chowder – This thick and hearty chicken and corn chowder is full of chicken, corn, cheese, peppers, and just the right amount of smokey spice. Your whole family is going to love this warm and cozy soup, and it's simple enough to pull off on a weeknight!

Homemade Paczki (Polish Doughnuts) – Paczki are traditional Polish doughnuts that are made from a rich brioche-style dough, filled with your favorite fruit preserves and rolled in sugar. These are served on Paczki Day (i.e. Fat Tuesday) here in the U.S. and on Fat Thursday in other parts of the world!

1. Large Silicone Dough Mat - I LOVE having a big dedicated silicone mat just for rolling out dough and the one I have has the measurement markings both along the edges and in circles in the middle, perfect for pies, cut-out sugar cookies, pizza dough, and any pastry dough. Can't recommend this enough! (Currently 50% off)

What I Bookmarked This Week
I love the look of this easy cheesy scalloped potatoes casserole with ham and broccoli; I’m wondering how it would be to swap the shredded potatoes for spaghetti??
Oooh stuffed pepper casserole, love that it would have all of the flavors but be easier to prepare!
I need to make these maple butter tart bars immediately.
Butterscotch crunch cake sounds amaaaaaaaazing.
This is genius >> Chocolate eclair PIE!
Have a delicious weekend!
