The Weekend Dish: 10/14/2023
Happy middle of October!
I hope that you’ve had a wonderful week and are sliding into the most relaxing of weekends. Isabelle and I are battling colds and it looks like it’s going to rain here for days upon days, so planning on just being cozy!
On Brown Eyed Baker This Week
Pumpkin Cupcakes with Cream Cheese Frosting – These pumpkin cupcakes are a dream! They are soft, moist, and have the most incredible pumpkin flavor along with being subtly spiced; the perfect complement of flavors. Topped with a fluffy cream cheese frosting, they are a fantastic fall dessert.
My Prime Big Deal Days Picks – I compiled a list of some of the best kitchen and home deals during the Prime Big Deal Days (some of which are still on sale), as well as rounded up all of the specific requests I got for recommendations and included those, too! If you are done shopping for now, it’s a great list to reference when starting your holiday shopping.
Easy Hashbrown Casserole – Hashbrown casserole is easy, cheesy, takes only minutes to throw together, and is a favorite side dish for holiday dinners from Easter to Christmas and casual weeknight dinners alike. Total comfort food!Â

What I Bookmarked This Week
I’m not usually a big doughnut fan, but this glazed old fashioned donut cake? YES!
Loving all of the flavors in this crock pot chipotle queso chicken chili.
Can you believe I’ve never tried a lasagna soup recipe? Making it happen this winter.
I’ve never heard of cinnamon pie, but it sounds (and looks) fabulous!
This saucy Hungarian red potato goulash sounds so cozy.
Have a delicious weekend!
I just finished baking this pie and even though I haven’t tasted it yet it’s certainly filling my house with an amazing aroma. I used a purchased frozen pie crust (Oronoque Deep Dish) and I had way too much filling so I grabbed a 7″ round pan and poured the rest of the filling in it and baked it alongside the pie. I wish I would have thought of ramekins which would have made a nice plated dessert. Can this pie be frozen?
Given our lovely weather today in the Burgh and after reading about your chicken and dumplings, I currently have some homemade chicken stock simmering on my cooktop, and I am giving your recipe a try. Â It sounds like a perfect dinner for a day like this and the smell of a simmering chicken stock is wonderfully appropriate for a rainy day. Â My husband just said “it smells like Thanksgiving” :). Â Have a great weekend and Let’s Go Pens!!
